I'm new! Can I tow a 21' Amerilite with a 2002 Honda Odyssey?

    - I have an opportunity to buy a very well maintained 2005 21' Gulfstream Amerlite 21MB, at a very good price. Dry weight alledgedly 3215.
    - My 'truck' is a 2002 Honda Odyssey van. I intend to add the factory towing package, at which point max towing capacity is 3500.
    - I assume I'll be pulling this over mountain passes occasionally.

~ Am I pushing my luck, or will this tow fine? Do you go specifically with 'dry' weight, or should I consider the weight of the hitch, water, and the gear we put in it as well?
~ Does a 'max towing capacity' of 3500 really mean beyond that is risky? Or does the mft rate it lower than necessary for liability reasons?
~ Any way to increase the towing capacity of the van?

If this is a "no go", I may start looking at small pop-ups instead... Goal is for easier camping, for me and my two 9 year olds, and sometimes my wife as well.

Maybe the question should have been "should I" instead of can I. I don't think that it sounds like a very good idea, and I am known for pushing the envelope.
