Remodeling a slide-out

We have a 2004 Arctic Fox 29V. We need to replace the dinette/booth set and the couch/loveseat. We'd like storage underneath the booth seats. We have new carpet and tile coming, so it needs to match, or vice-versa.
Any ideas? We would like the booth to be nice. It has been difficult to locate used RV furnishings, people who do or provide this type of work.

Chip if I read it right you are trying to put a booth style dinette. Or , are you trying to move the booth style out so you can get the carpet / tile in? I had mine done Dec was a year ago, the Booths are secured to the sub floor and was easy to get out of the way.
